The story of La Sustainable Table

La Sustainable Table is about slowing down and seeing food through a more conscious lens. Travelling through a region not just as a passer by but with more overt curiosity, taking in the scents, colours, traditions and stories behind how the food of the region has been produced.

It’s an invitation to see food as more than sustenance: as an expression of place, season, and the care taken for land, animals, and ultimately, our own health. 

And what better way to do that than explore via the French food culture

The Market at the heart of it all

The French approach to food is more than gastronomy; it’s a way of life that celebrates seasonal abundance, slow enjoyment of meals, and respect for the land. Across towns and cities, local markets remain at the heart of daily life, where farmers and producers sell their regional ingredients directly to consumers. These markets are the epitome of connecting people with their food, and with full understanding of what is in season: the freshest produce, cheeses, meats, and baked goods are displayed, stories are shared, and regional traditions are celebrated and preserved.

Even the prevalence of the plat du jour—the daily special on almost every restaurant menu—reflects this philosophy, created from the freshest local ingredients that day and that season. It showcases what is abundant, reduces waste, and highlights the flavors of the region.

 

A French love affair

My love affair with France began in secondary school in Australia, where I studied French language, and discovered a deep appreciation for French language, culture and food.

I have always felt an affinity with the European way of life; perhaps a legacy from my Dutch Father.  I resonate with their celebration of seasonal food, local producers at bustling markets, and the simple daily pleasures of eating fresh produce and sharing with others.

Having lived almost half my life in Europe, I have spent much time travelling to and exploring France for work and pleasure, and had the good fortune of living in the beautiful Antibes on the Côte d’Azur for a while

Sustainability through French life

French food culture is built on simple but powerful principles: long, leisurely meals that nourish, using every part of the animal or vegetable, and preserving the best of each season

On our food tours, you’ll be guided through vibrant local markets, with shared insights on sustainability, seasonal produce, and regional traditions. Then we cook together in traditional French Domaine’s and kitchens, creating dishes inspired by French tradition as well as to support gut health, energy, and overall wellbeing. You’ll learn how French eating is delicious, sustainable, and deeply connected to the land.

Sharing the journey

My professional journey has grown out of my lifelong passion for food and nature.  I hold an MBA in Sustainable Food & Agriculture and am a nutrition trained Naturopathic Chef and Sustainability Consultant, Educator and Keynote Speaker working with clients across the full farm to fork food sector, providing services that range from sustainable supply chains to recipe development, new cafe openings and food concepts, to training chefs and hospitality teams.  

Food is my first waking thought every day!  And I love nothing more than sharing this passion with all that are open to receive it

La Sustainable Table is born from a desire to share my knowledge, my travel experiences and love of food with others, and inspiring them to connect with food for their health and their environment
